Coconuts are the ultimate tropical fruit! The scent and taste of coconut can bring anyone into an island state of mind. They are so popular and versatile; they even have their own holiday- September 2nd is world coconut day! Nothing beats cracking open a fresh coconut right off of a tree. There are plenty of coconuts on Sanibel Island, so here are some tips and tricks on what you can do with them!
1) Crack it open and drink the water! No, you don’t need a huge machete to get it open. There are tons of YouTube videos that will show you how to easily crack open a coconut. Coconut water is filled with electrolytes, so it will help to keep you hydrated during your visit to our beautiful beaches!
2) Eat the meat as a snack! It’s a sweet and refreshing treat that is actually healthy for you! Coconuts contain many vitamins and minerals like iron, magnesium, and fiber.
3) Drink a cocktail out of the coconut shell! It’s the ultimate way to enjoy a drink while you’re on vacation! See below the recipe for the perfect pina colada you’ll enjoy whether you’re lounging out on the beach or hanging out with family and friends back home!
The Perfect Pina Colada
3 oz. Island Company Rum
1 cup pineapple juice
3 oz. canned cream of coconut
2 cups ice cubes
2 pineapple wedges or spears for garnish
In a blender, combine the rum, pineapple juice, cream of coconut and ice and blend until smooth. Divide between two double-old fashioned or highball glasses and garnish each glass with a pineapple wedge. Serve immediately with a straw. Makes 2 drinks.
